BBQ Chicken Wings
(As many or as few as you like.) Works well on thighs and breasts too, bone in or out. If they are breasts, puncture the meat several times with a fork before marinading, to get flavor well into the piece.
Marinade chicken for 24 hours to a few days, in enough liquid zesty Italian dressing to coat well (with a little run off). Starting with chicken frozen is okay. Shake container a few times during this period.
Place chicken in metal baking pan with sides. Pour any extra marinade over the top and season with a little DRY zesty Italian mix. Place pan on bottom shelf of oven and broil until brown and crisp, turn and brown on second side. Turn oven off. (you can also cook this on a grill.) Add a generous squiggle of BBQ sauce to chicken ( I used Stubbs), a few drops per piece, of Pick-a-Peppa sauce and a pinch of brown or turbinado sugar. Place back into oven for 10-20 minutes.
I hadn't cooked BBQ chicken this way in a long time. Forgot how good it was!
